Now that the summer heat is here, Ivan Ramen is keeping pace with two great cold noodle dishes. We're currently serving Nori Tori Soba, Ivan's take on traditional Japanese Soba made exclusively with ramen ingredients. The noodles are thin whole wheat noodles with a great wheat aroma served with a dashi broth with loads of ao nori on top (very high quality nori shipped directly from Hokkaido) On top of the noodles spicy wasabi na lettuce and poached chicken is piled high with a light garlic dressing.
Also we just started what is now our annual Ivan Ramen Hiyashi Chukka, traditionally served throughout Japan during the summer months cold egg noodles served with a sour soy vinaigrette with egg, ham and cucumber. In the Ivan Ramen version, we take homemade Ume (plum) vinegar and shio (salt) moto dare and chile oil to make a fruity sour salty vinaigrette. The noodles are thick Rye noodles, with grilled pork belly, fresh tomatoes, cucumbers, salad greens and house made pickles. It's a really original dish, totally refreshing and impossible to forget. We'll serve it until the plum vinegar runs out! Hope to see everyone to try out some of these great new dishes!
