Hiyashi Chukka is a classic cold noodle dish, a sour soy vinaigrette poured over noodles with ham, lettuce, chopped egg and cucumber served in the summer here in Tokyo.
The Ivan Ramen version has a house made plum vinegar dressing with a little chili oil kick, roasted tomatoes, lettuce and seasonal pickles, topped off with grilled pork belly! It's as good as it sounds so give it a try.
